Sabrina Rimouche is a PhD candidate in nutrition at the Université de Montréal, under the supervision of Professor Jean-Claude Moubarac. Her research at the Centre de Recherche en Santé Publique (CReSP) focuses on the economic, environmental and political impacts of ultra-processed products. In collaboration with the Heart and Stroke Foundation, Sabrina explores these dimensions in the Canadian context by assessing the impact of ultra-processed products on farmers’ incomes and the level of coherence between food and agricultural policies. Sabrina also collaborates with the International Reference Center for Life Cycle Assessment and Sustainable Transition (CIRAIG) to develop a two-dimensional assessment methodology for the sustainability of foods, taking into account their level of processing and their environmental impact.
Sabrina holds a Bachelor of Biomedical Sciences from Monash University and a Master of Public Health, specializing in Global Health, from the Université de Montréal. She gained valuable experience during her internship at the Food and Agriculture Organization of the United Nations (FAO) headquarters, working on projects related to sustainable food systems, the impact of dietary practices on the microbiota, and policies to prevent non-communicable diseases.
Sabrina is deeply committed to finding innovative solutions to contemporary food challenges, promoting practices that benefit human health, animal welfare, and environmental sustainability.
